I love food prep Wednesdays! Because of my busy schedule, I don’t typically have time or energy to cook every day of the week.  BUT I do love to cook my own food from scratch so I know what I’m putting in to my body.  So, I typically spend Sunday and Wednesday evenings making big batches of food and then dividing them up into containers to take with me for the next few days. It can be a loud, messy process during which it is usually safest for my host family to evacuate the kitchen while I dirty EVERY dish in the house and use all appliances simultaneously.
This Wednesday, I ended up with a beautiful homemade roasted vegetable tomato sauce (mushrooms, cherry tomatoes and zucchini and roasted red peppers), and a chicken and vegetable saute in a light chili garlic sauce with slices of fresh mango over brown rice.

All prepared with love while dancing moronically to the Gipsy Kings…happy times.  It is immensely satisfying to pile together fresh ingredients to make wholesome, delicious things to fuel my body every day.  I don’t understand why everyone doesn’t love to cook… how can you not love food?!
